This cozy and comforting breakfast sandwich was inspired by the classic diner staple but simplified for home cooking. It's perfect for ADHD brains because it requires minimal prep, uses just one pan, and has built-in time breaks while things cook - perfect for checking your phone or feeding the cat without ruining breakfast. Plus, the protein-rich combination of egg and cheese in this breakfast sandwich provides sustained energy to help with morning focus and medication absorption.

The Ultimate One-Pan Breakfast Sandwich

Prep Time: 5 minutes
Cook Time: 10 minutes
Servings: 1 sandwich

Ingredients:

- 2 slices bread (any kind you like)
- 2 eggs
- 2 slices cheese (cheddar or American work great)
- 2 tablespoons butter, divided
- Salt and pepper to taste
- Optional: sliced tomato, arugula, avocado, bacon, or ham

Instructions:

1. Place your pan on the stove and turn it to medium heat. While it's heating up, gather all your ingredients and place them next to the stove.

2. Add 1 tablespoon butter to the pan and let it melt. Place both slices of bread in the pan and put a slice of cheese on each piece.

3. When the cheese starts to melt slightly (about 2 minutes), crack an egg into the space between the bread slices. Sprinkle with salt and pepper.

4. When the egg whites are mostly set (about 3 minutes), use a spatula to carefully flip the egg. Add your optional toppings to one slice of bread.

5. Cook for another minute, then use your spatula to place the egg on one slice of bread. Close your sandwich with the other slice.

Tips for ADHD Cooking Success:
**Set a timer on your phone for each step - even if you don't need it, it's better than getting distracted and burning your breakfast

**Keep all ingredients on the left side of the stove if you're right-handed (or vice versa) so you can maintain a clear workflow without forgetting anything

**If morning executive function is tough, pre-slice any optional toppings the night before and store them in a container in the fridge

**Make cleanup easier by placing a paper towel next to the stove for your spatula between flips - this prevents mess and gives you one less thing to clean later
